I'm trying to figure out how to build a service which is processed as follows: a call through post is made to an API Gateway endpoint. Then API Gateway publishes a message to SNS, which in turn triggers a Lambda function. I'm considering to do this using the Serverless Framework. Although, documentation and similar examples both with and without Serverless seem to be pretty scarce (specifically for Python). Am I just not looking in the right place? Does anyone know of any sources that can get me into the right direction to build this?
python amazon-web-services aws-lambda aws-api-gateway amazon-sns

Do you mind sharing why you are adding SNS to your architecture? Just to add an asynchrony flavour?
