I would like to design sharepoint sites and pages writing code and avoiding the GUI. I found out that SPFX might be what I'm searching for but before diving in I would like to understand if with this method I will be able to completely customize my site collection, sites and pages including the O365 top bar and the sharepoint header that I almost always see in the tutorials.

I don't want to build a web-part and include that to a page formatted sharepointy-like but I would like to have full customization power.
I saw that master pages used to do this in the classic experience sites but I need to work with modern experience.

I tried to build master pages with sharepoint designer but I feel limited and I can only work with html and css as far as i understood.
