파울 카러(Paul Karrer, 1889년 4월 21일 ~ 1971년 6월 18일)는 스위스의 화학자이다. 다당류의 구조를 밝히고, 비타민 A와 비타민 K를 서로 분리하였으며, 비타민 B2와 비타민 E의 합성에 성공하였다. 유기화학 분야에 공헌하였으므로, 1937년에 노먼 하워스와 함께 노벨 화학상을 받았다. 저서로 《유기 화학》이 있다.
