해산물(海產物) 또는 해물(海物)은 바다에서 나는 동식물을 두루 일컫는 말이다. 수산물(水產物)은 바다 외에도 강이나 호수 등 물에서 나는 동식물을 통틀어 이르는 말로, 해산물보다 더 넒은 개념이다.


물고기나 수산물을 잡거나 거두어들이는 것을 어로라 부르며, 물고기나 수산물을 인공적으로 길러서 번식하게 하는 것은 양식이라 부른다. 물고기를 잡는 일은 도구에 따라 낚시, 그물질 등으로 부르기도 한다. 해산물을 따는 일은 채포라 부르는데, 해녀들이 바닷속에 들어가서 해산물을 따는 것을 가리킬 때는 물질이라고도 한다.

참치, 명태는 원양어업의 대표적인 생산물이다. 회나 초밥에 이용되는 어류는 대부분 양식하여 생산한다.
